Slow Cooker Carnitas & Jalapeno Slaw

Tacos are a regular in our home. Also known as Taco Tuesday. The possibilities are endless too when it comes to crunchy, soft, flour, corn, or salad.  It’s always fun. It’s ALWAYS yummy. This past Tuesday I experimented with the best recipe yet. Street Style Carnitas. Carnitas literally means “little meats” according to the all knowing Wikipedia. It is pork cooked in oil or fat until tender.  Well the recipe I am going to share with you below is not cooked in oil or fat and is gluten-free.  

So, gather your ingredients, turn on a Taco Tuesday playlist (yes, there is such a thing), and salsa out. If you try this be sure to leave me a comment and let me know what you think.

Ingredients
  1. CARNITAS INGREDIENTS
  2. pork loin
  3. 2 Goya Sazon packets (I used con cilantro y achiote)
  4. 2-3 bay leaves
  5. 2 tsp garlic salt
  6. 2 tsp coarse black pepper
  7. 1 tsp allspice
  8. 1 tbsp cumin
  9. 2 tsp chili powder
  10. 2 cups beef broth
  11. corn tortillas
  12. queso fresco (crumbled)
  13. jalapeno cilantro slaw (see below)
  14. extra lime for squeezing/garnish
  15. SLAW INGREDIENTS
  16. 1 cup shredded cabbage (8 oz bag of purple and green is what I prefer and it's a time saver)
  17. 1/2 cup mayo
  18. juice of 1 lime
  19. 1 tbsp of vinegar
  20. 1/2 tsp salt
  21. 1/2 tsp coarse pepper
  22. 1 fresh jalapeno (seeded and finely chopped)
  23. 1 handful of cilantro (coarsely chopped)
Instructions
  1. CARNITAS DIRECTIONS
In a slow cooker place all of the following ingredients
  1. pork loin, Goya Sazon packets, bay leaves, seasonings, and broth.
  2. cook on low for 6-8 hours
  3. Once finished, shred finely with forks and place into warm corn tortillas.
  4. Top with slaw and freshly crumbled queso fresco and serve with a lime wedge.
  5. FOR SLAW DIRECTIONS
  6. This can be made as early as the night before or as late as right before serving.
  7. Add all of your slaw ingredients to a bowl and mix well.
  8. Cover and refrigerate until ready to serve.
Notes
  1. Cilantro is not everyone's favorite herb. Feel free to omit from recipe or if you love it like I do, add more!
  2. Leftovers can be added over fresh greens for a salad for a super low carb option or you can add over your favorite tiny bun for sliders.
