BLT Pasta Salad….Shyeah

pasta I have been away from my blog for some time.  I have been busy healing and dividing the rest of my energy up between family and friends. I had quite the Lyme relapse last year and I began treatment again in March.  It caused my to hit a brick wall.  I’m just now learning how to pace my time and effort so that I am not just completely spent at the end of the day.

I’m still enjoying plenty of things. We have a new puppy.  She is a Boston Terrier.  She is, I guess you could say, my new hobby.  I’m just glad she likes to cuddle.  Summer did go by so very fast though.  We visited Panama City Beach this year.  It was beautiful. I was determined not to spend all my time in the condo cooking 3 meals.  I put together a quick list of foods that would allow everyone to chip in, and some even transferred over into lunch or dinner.  Like this BLT Pasta Salad Salad dish above. We had breakfast burritos our first morning there and I cooked extra bacon to go into my pasta dish. While we fixed breakfast, I was able to throw this together and it was able to sit in the fridge and chill while we sat on beach and baked.  Lunch was done and it was a hit.  YES I’m gluten & dairy free.  I have to be due to the medicine protocol I’m on, not because of allergies.  YES I did break some of the rules for that week. PS If you are gluten-free, just use gluten-free pasta and make sure you rinse it VERY well to remove all the sticky starch.
